Auntie Natalie's Savoury Carrot Cake

Adapted for my vegan(ish) daughter and great to go with Thanksgiving dinner

Equipment

  • Bundt pan

Ingredients

  • cups vegan butter regular butter or even shortening will do
  • 2 cups brown sugar
  • 3 cups grated carrots
  • 4 flax eggs I like this recipe https://minimalistbaker.com/how-to-make-a-flax-egg/ but regular eggs work too!
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • 1 tsp sea salt
  • 4 cups whole wheat flour
  • 1 tsp baking soda, dissolved in 2 tbsp hot water

Instructions

  • Preheat oven to 325 degrees. Grease and flour a bundt pan.
  • Combine nutmeg, cinnamon, salt and flour in a medium bowl.
  • In a large bowl (I use my stand mixer) cream the butter with brown
    sugar. Add the (flax) eggs, carrots and dissolved baking soda.
  • Spoon into prepared pan and bake for about an hour, or until tooth pick comes out clean.
