Auntie Natalie's Savoury Carrot Cake
Adapted for my vegan(ish) daughter and great to go with Thanksgiving dinner
- 1½ cups vegan butter regular butter or even shortening will do
- 2 cups brown sugar
- 3 cups grated carrots
- 4 flax eggs I like this recipe https://minimalistbaker.com/how-to-make-a-flax-egg/ but regular eggs work too!
- 1 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp sea salt
- 4 cups whole wheat flour
- 1 tsp baking soda, dissolved in 2 tbsp hot water
Preheat oven to 325 degrees. Grease and flour a bundt pan.
Combine nutmeg, cinnamon, salt and flour in a medium bowl.
In a large bowl (I use my stand mixer) cream the butter with brown
sugar. Add the (flax) eggs, carrots and dissolved baking soda.
Spoon into prepared pan and bake for about an hour, or until tooth pick comes out clean.
